ARTICHOKES FROM TUDELA
What is Artichoke from Tudela? Artichoke is one of the vegetables which gastronomist love the most. It is appreciated because its digestive, diuretic, anti-rheumatic properties. Pharmacologists consider it very useful to fight against cholesterol, arteriosclerosis and hepatic and renal diseases. Some pieces of information - the substance which gives the bitter taste is the cynarine . It stimulates the digestion of fats. - to avoid artichokes turn black (because the oxidation of vitamin C) you can spray them with lemon juice. - when we cook them, their vitamins pass to the water, so the best thing to do is to use a little quantity of water to boil them. |
