With prawns or king prawns: drain the garlic shoots and cook them in olive oil over low heat with a chopped clove of garlic. Add chopped prawns or king prawns and stir well. Add salt and pepper according to taste. Whisk 4 eggs with some crème fraîche and pour in the pan.
With mushrooms: dice the mushrooms and cook them in olive oil 3 minutes, cover and simmer over low heat until they are browned. Add the drained garlic shoots, add salt and stir well. Add 4 whisked eggs, stir, and serve.
