With bacon: heat olive oil in a frying pan, add a chopped clove of garlic and bacon. Add a teaspoon of flour and cook over low heat. Cook the vegetables in their juice, drain and pour the bacon sauce on top.
Menestra with meat: heat olive oil in a frying pan and add the diced meat (lamb, pork or chicken). Remove the meat when browned and keep aside. Cook some chopped onions, garlic and bacon in the same oil. Once browned, add a tablespoon of flour, the meat with some white wine and the vegetables juice. Season and cook slowly. When the meat is cooked, add the vegetables and simmer over low heat.
